Saboreal Spicy Zucchini

Serves 2 people.


• 1 large zucchini

• 2 Petiscada of mackerel with habanero

• 2 garlic cloves

• 1/3 pepper

• Red pepper

• 1 small carrot

• 1 small onion

• Oil

• ½ glass of white wine

• Red pepper

• Thyme

• Salt q.s.

Covering option: Soy cream + breadcrumbs or Flemish cheese.

Cut the garlic and onion and place in a skillet with oil to sauté. When golden, add the chopped carrots and peppers. At this stage you can add other vegetables of your choice. A few minutes later add the petiscada, salt, pepper and ½ glass of white wine.

Cut the courgette in half and remove the seed area. Fill with the previous preparation. For the topping you can add cheese cubes and cherry tomatoes or make a light breadcrumb dough with soy cream.

Bake for 15 to 25 minutes at 180º. Remove when it starts to turn golden. Serve with salad.
